    Monk’s Blood pays homage to the monks of Belgium’s monasteries who have been brewing some of the world’s great beer for centuries. During times of fasting, the monks subsist solely on beer, which they refer to as “liquid bread”. Beer, quite literally, is in their blood. The most sublime of the monk’s premium brews is dark like blood, rich and nourishing. ‍ 21st Amendment founders Nico Freccia and Shaun O’Sullivan traveled to Belgium to develop the recipe for this special beer, visiting small, traditional breweries in the hop fields of west Flanders, not far from the famous Trappist abbey of Westvletren. Monk’s Blood is designed to pair beautifully with rich stews, creamy cheeses, delicious desserts or just by itself, in a Belgian tulip glass, with a good book by the fire.

It’s produced by taking our Brother David’s Triple wort from the kettle and adding it to wine barrels to ferment with our Horse Tongue Wheat sour culture. That’s right: no brewer’s yeast or stainless steel here; it’s 100% barrel-fermented with wild yeast and bacteria. After primary fermentation has ended (several months or more), a healthy dose of black currants is added, providing natural sugars to encourage additional fermentation. It will spend upwards of a year or more in the barrel until it has matured and reached the perfect balance of sourness and complexity. The resulting beer is a deep burgundy color with a bracing sourness and subtle sweetness with hints of oak, dark fruit, and wild berry.

    As we look to build our bench strength with Yeti variations, this was one of the easy favorites for flavor combinations to try. The sweet vanilla tones meld into the oak character and the two really support and enhance one another, all while sitting on the bold, roasty character we all love from Yeti.
